Ingredients

Parfait:

  • 1 lb. (450g) pumpkin puree

  • 1.1 lbs. (500g) Greek yogurt

  • 4 tbsp. mascarpone cheese

  • 1 tbsp. vanilla extract

  • 2 tbsp. brown sugar

  • 2 tsp. ground cinnamon

  • ¼ tsp. ground nutmeg

  • Toppings:
  • 2 tbsp. honey

  • 4 tbsp. dark chocolate chips

  • 4 tbsp. chopped hazelnuts

Directions

  • Place the parfait ingredients into a large mixing bowl. Using a hand
    held electric mixer, or a whisk, mix together until smooth.
  • Divide the parfait mixture into 6 serving glasses or jars. Cover and
    refrigerate for 30 minutes or overnight.
  • When ready to serve, top each with a drizzle of honey, chocolate
    chips and chopped hazelnuts.
